Scientific school “Non-waste technologies of processing of food raw materials and their equipment design”

In a scientific school under the guidance of professor Postnova G.M. “Non-waste technologies for the processing of food raw materials and their equipment design” was carried out the following work:
The first direction is the development of schemes for the distribution of poultry and the creation of new technologies for semi-finished products and culinary products.
The following representatives of the scientific school work in this direction: Candidates of technical sciences, associate professors Yesinova NI, Postnova O.M., Ph.D. in Economics Popova S.O.
On the basis of the work the schemes of distribution of poultry for separate anatomical parts have been developed, the rules of the release of anatomical parts of poultry have been determined, new technologies of semi-finished products and culinary products have been developed, a device for separation of poultry bones has been developed, standard documentation for semifinished products has been developed and approved.
The second direction is development of technologies of culinary production on the basis of fish raw materials.
In the process of growing and storing pond fish there is a loss of damaged fish raw material, which according to its technological parameters does not differ from the standard. The problem of storage and use of pond fish for the preparation of semi-finished products and culinary products has been solved. When processing oceanic fish (mackerel, stagrand), there is also a loss of raw material from the imperfection of the technological process of making hot smoked fish. Therefore, the development of cooking products with the use of rejected fish is urgent. Candidates of technical sciences Ivannikov P.V., Pronin I.O. are working in this direction. As a result of this work, technologies for storing pond fish on a livestock base, technologies of culinary products from pond and oceanic fish have been developed, and normative documentation for fish cooking products has been developed and approved.
The third direction – the study of processes of processing agricultural raw materials by electrophysical methods and the creation of new devices for their implementation. According to this direction, the candidate of technical sciences, docent Chekanov M.A., docent Chervonii VM, applicant Nechiporenko DA, applicant Yakovlev O.V.
In this direction a device for fish salting with ultrasound was developed. The essence of the development is the creation of new equipment of low productivity for fish salting of ocean-going fishing using ultrasound. A rational mode of handling of fish raw materials was defined, which allows you to obtain a high quality product when reducing the harvesting process. The use of development allows to intensify the process, increase the quality of salted fish and prolong its shelf life.
On a scientific school under the direction of professor Postnova GM 7 theses for obtaining a scientific degree of the candidate of technical sciences are protected. To date, 2 candidate dissertations have been fulfilled.
