On November 24, 2016, the protection of the dissertation work for obtaining the scientific degree of the candidate of technical sciences on the specialty 05.18.16 – food technology on the topic: “Improving of the technologies of protein-carbohydrate semi-finished products with the use of carotene-containing vegetable raw materials” was overpassed by the applicant of the department, Sefikhanova Kateryna, which was performed under the leading of Ph.D., associate professor Zolotukhina Inna.
The protection took place in a solemn atmosphere in the Hall of meetings of the Academic Council of KSUFTT named after M.I.Belyayev
In the dissertation work the author scientifically substantiated the development of technologies of protein-carbohydrate semi-finished products with the use of carotene-containing vegetable raw materials. The composition and properties of puree of vegetative raw materials were investigated in view of their potential application in technologies of protein-carbohydrate semi-finished products with the use of carotene-containing vegetable raw materials. Experimental methods have investigated the protective effect of the stabilizer “Astri Gel” on the biologically active substances of carotene-containing vegetable raw materials. The technological schemes for the production of protein-carbohydrate semi-finished products using carotene-containing vegetable raw materials are substantiated and developed. Indicators that characterize the nutritional value of developed semi-finished products are determined. The author made a series of measures on the introduction of new technologies in restaurants of Ukraine. The work presents data on the economic efficiency of the introduction of new semi-finished products into production.
